Amazing Sugar Cookies

I have never really been a huge fan of sugar cookies. I don't know. . .maybe it's that I would rather have chocolate or something. But, I have been intrigued with a new icing technique that I saw a few months ago and knew that I wanted to try it, so I did. I LOVED IT! Of course, it came from Our Best Bites. Where else? I kind of went crazy and made all sorts of little cookies out of the batch of sugar cookies. And, true to my best self, I made a majority of them with CHOCOLATE! (And toffee, which just makes it that much better!)

The gals over at Our Best Bites shared the most ingenious technique for making sugar cookies, that made this project so easy. . . you roll the dough out between 2 layers of parchment or wax paper and chill the dough already rolled out in the fridge. So, when you go to cut it, it is very easy to work with and you are not trying to roll out rock hard dough, making it too soft to cut out in the process. Emma was even able to help this time AND the cookies turned out. (Not so much last time I tried making sugar cookies at Christmas time.) I also don't have fancy cutouts and used a kid's cup to cut all these out.
Of course, it still took time to decorate all these babies, but it was my creative outlet for the day. . .kids in bed, husband out of town. . .what's a girl to do?

SO, I bet you are ready to see the pictures. . . Let me just say, for not being a huge sugar cookie fan, I could not stop eating these!!! Not just the chocolate dipped ones, either. The ones with the Glace icing are incredible- so buttery and delicious. YUM!!

A few for the kiddos. Oh- I also made some little cookies with the blue and purple icing with the letter U on them for Joy School. The kids loved them. Er. . .I guess I didn't love them enough to take a picture of them before they were eaten.

Added a little coconut for fun.
