Sweet Broccoli Salad




Sweet Broccoli Salad

A friend brought this to an Enrichment Meeting and I loved it. I had had it before, but never this good!


1 head fresh broccoli (approx. 1 lb), cut into small bite-sized pieces (4 cups of florets)

¼ cup red onion, chopped

½ cup Craisins (sweetened dried cranberries)

3 Tbsp apple cider vinegar or red wine vinegar (if you can find it use specialty vinegar- she used ‘pear-infused’ vinegar)

2 Tbsp white sugar

1 cup mayonnaise

10 slices bacon, cooked and crumbled (or Real Bacon, 1-3 oz. jar)

½ cup honey roasted almonds (Sunkist brand Almond Accents are great or just use plain slivered almods

In a medium bowl, combine the broccoli, onion and Craisins. In a small bowl, whisk together the vinegar, sugar and mayonnaise. Pour over broccoli mixture, and toss until well mixed. Refrigerate for at least 2 hours. Before serving toss salad with crumbled bacon and honey roasted almonds. If I am eating this at home over the course of a couple days, I add the bacon and almonds on the servings as I eat it. Serves 6-8.
