BLT Crepes

BLT Crepes: 


  • 2 large eggs
  • 1 1/4 cups milk
  • 1 cup all-purpose flour, whole wheat flour, barley flour, ground flax combo.
  • 2 tablespoons vegetable oil or melted butter
  • 1/4 teaspoon salt

  • Filling:
    • bacon in large crumbles
    • spinach/ lettuce mix (spring mix)  tossed with:
    1 tablespoon balsamic vinegar
    1 1/2 tablespoons olive oil
    1 teaspoon minced white part of green onion
    1 teaspoon pure maple syrup
    Salt and Pepper to taste

    • tomatoes chopped (cherry/grape tomatoes would be particularly lovely)
    • asparagus cooked to liking and chopped in segments

    Mix together:
    4 ounces cream cheese, softened
    1 tablespoons butter, softened
    1 ounce gorgonzola cheese
